Savoury Scone

Yummy.... Cheese 'n' onion 'n' bacon....

Last weekend I finally tried one of the recipes out of my new book "Scones". I chose three recipes of which I had the ingredients in my pantry and let my husband pick one. He chose the "Cheese and Onion Scone" and I took the liberty to add bacon and also used low fat products.

May I present the low fat bacon version: "Cheese 'n' Onion 'n' Bacon Scone"

Ingredients:

1 medium onion
200g low-fat bacon (chicken bacon)
200g flour
100g parmesan, grated
100g feta cheese, finely chopped
100g greek joghurt, low-fat
125ml milk, low-fat
1 Tbs oil
1 Tbs sugar
2 Tbs water
2 Tsp baking powder

Method:
Finely chop the onion and the bacon and heat 1 Tbs Oil in a non-stick pan. Over medium heat brown the onion and the bacon.
Add 1 Tbs sugar and caramelise everything. Add 1-2 Tbs water if needed.
Remove onion and bacon and let it cool.

Preheat the oven to 200 degrees Celcius or 180 degrees Celsius fan forced.

Sift the flour through a sieve into a large bowl, add baking powder and parmesan and stir everything with an egg whisk.
Carefully add the cooled onions and the bacon using a fork. Slowly add the feta cheese and the joghurt, still stirring carefully with the fork. Lastly add the milk, but only half at first. Slowly add more milk until there are no dry spots left in the dough (you might not need all of the milk).

On a floured surface knead the dough twice and form a 4 cm long and 2 cm high roll. cut the roll into 12 pieces and bake on a baking tray lined with baking paper for around 10-15 minutes.

They taste the best when eaten on the same day. Enjoy :)
